Mmm Mmm Good . . . for You!
This bitter cold weather has me yearning for warm foods like homemade soup. My favorite, incredibly easy to make soup base is bone broth, which has an added benefit of being a healing food. So, what is bone broth, and why is it beneficial?
Bone Broth
Combine bones, water, veggies and vinegar in a slow-cooker. Cook on low heat for a minimum of 24 hours (up to 48 hours for chicken, 72 hours for beef).
White Bean and Chicken Chili
In a large heavy-bottomed saucepan, heat the oil over medium heat. Add the onion and cook until translucent, about 5 minutes.
Southwestern Quinoa Salad
Cook quinoa according to directions. Once cooked, toss with remaining ingredients in a large bowl.
Slow Cooker Jerk Chicken
Mix all the spices together in a bowl to make a rub for the chicken. Wash the chicken meat in cold water briefly.
Skillet Sausage with Onions & Peppers
Add sausage and 1/2 cup water and cook, turning occasionally, until all water is evaporated and sausage is cooked through. This should take at least 15-20 minutes. Add a little more water to avoid the sausages from becoming browned.
Shredded Salad
In a small bowl, whisk together the vinegar, almond butter, coconut aminos, garlic, and honey. Chop the basil, mint, and cilantro leaves and toss with the cabbage and carrot.
Sesame Ginger Salad Dressing
Mix equal parts of the apple cider vinegar and olive oil together. Add remaining ingredients.
Salmon-Avocado Omelet
Beat eggs in a small bowl. Heat oil in a frying pan. Add onion and sauté for 5 minutes. Add eggs, turn heat to low and cook for 3-5 minutes until eggs are mostly cooked.
