1 cup unsweetened almond, or rice, or coconut milk
½ cup water
1 cup steamed broccoli
1/2 cup minced green onions
1/2 cup mushrooms, steamed or sautéed
seasoning to taste (basil, oregano, cayenne, salt, pepper, etc)
Optional: 1 cup grated mozzarella (almond, rice or Daiya mozzarella) cheese
Note: Use any vegetables. Other options include spinach, chard, onion, peppers, tomato
Preheat oven to 350. In a medium bowl, using a fork, whisk eggs, milk, water, and seasonings until well blended. If using, add grated cheese and mix well.
Lightly grease a 9 or 10 inch pie pan with olive oil. Add cooked vegetables, pour in egg and cheese mixture. Place pie pan on a baking sheet and bake 45 to 50 minutes, or until a knife inserted into center comes out clean. Let cool 5 minutes before slicing.
Refrigerate leftovers and heat for a quick breakfast.
