Chocolate Almond Cookies

Chocolate Almond Cookies


3 cups almond meal (grind your own if you want!)
2 oz ghee, grass-fed butter or coconut oil
1 tsp baking soda
1 tsp vanilla extract
2 organic free-range eggs
½ cup pitted Medjool dates
¼ tsp stevia
½ cup dark chocolate chips
pinch of sea salt


Step 1

Pre-heat oven to 350ºF.

Step 2

Place the almond meal, butter/oil, baking soda, vanilla, eggs and dates into a food processor and mix until well combined

Step 3

Add the chocolate chips and stir well.

Step 4

Using wet hands, roll the mixture into approximately 1 T balls and flatten with your palm. Be sure they are well spaced on the cookie sheet as the will expand when cooking.

Step 5

Bake for about 10 minutes or until golden brown.
