Ingredients
For dressing:
3 T. each: low sodium soy sauce, sesame oil
2 T rice vinegar
¼ C. honey
2 R. hoisin sauce
1 T. Dijon mustard
½ C. olive oil
For salad:
2 cups shredded cooked chicken breast meat
1 head of lettuce
1 cup shredded carrots
½ cup chopped fresh cilantro
2 T. sesame seeds
Directions
Step 1
Whisk together soy sauce, sesame oil, vinegar, honey, hoisin and mustard in a medium bowl; whisk in olive oil. Set aside.
Step 2
Toss chicken, lettuce, carrots and cilantro together in a large bowl. Add ½ C. of dressing: toss to coat all ingredients, adding more dressing as needed.
