Ingredients
3 T extra virgin olive oil
1 1/2 T apple cider vinegar
juice of one lime
1 tsp chili powder
1/2 tsp paprika
1 tsp garlic powder
cayenne pepper, to taste
salt and pepper to taste
1 pound boneless chicken breasts, cut into cubes
Any vegetables that are easy to skewer: peppers, tomatoes, mushroom, onions, zucchini
Directions
Step 1
Whisk oil, vinegar, lime juice and spices together in a bowl.
Step 2
Add chicken and stir to coat.
Step 3
Cover and refrigerate for at least one hour.
Step 4
Chop veggies into bite size pieces. Thread them together with chicken onto skewers.
Step 5
Grill over medium-high heat for around 10-15 minutes, turning halfway through.
Makes 4 skewers.
