1 1/2 pounds chicken breasts, boneless, skinless
Kosher salt and pepper to taste
1 onions, chopped
1/2 pound fresh mushrooms, thickly sliced
1 clove garlic, minced
1 tablespoon tomato paste
1 14 1/2-ounce can diced tomatoes, drained
2 tsp dried basil
2 tsp dried oregano
1 C. Basamati Brown rice (optional)
2 C. Water or chicken broth (add if including rice)
Fresh basil to garnish
Add chicken and rice to a slow cooker, and then top with remaining ingredients. Cover and cook on Low 7 to 9 hours or on High 4 to 5 hours.
Garnish with fresh torn basil
If not using a slow-cooker, over medium heat add 1 T olive oil and then add tomato paste, diced tomatoes, water/broth, garlic, onions. Stir well. Add the rice, mushrooms and chicken and cook covered about 25 minutes.
