Asian Kale Salad with Nuts and Apples


2 T extra virgin olive oil
2 T lemon juice
2 T coconut aminos or Bragg’s Liquid Amino Acids or tamari sauce
1 bunch kale de-stemmed and cut into ribbons
1/2 Red onion cut in half and onion thinly sliced
Toasted seeds or nuts of your choice (pepitas, sunflower, sliced almonds). Sunflower are my favorite!
1 apple, diced (optional)


Step 1

Toast nuts over medium heat in a pan.

Step 2

Put the sliced onion in a bowl and cover with the lemon juice and aminos or tamari.

Step 3

Let onions marinate while you massage the olive oil into the kale.

Step 4

Then add the onion mixture. Let sit for about 20 minutes.

Step 5

Toss the seeds/nuts and apples into the salad. Combine well and serve.
