Heat oven to 350ºF. Place salmon on a lightly greased Pyrex baking dish. Mix garlic, EVOO, basil, salt, pepper, lemon juice and parsley. Spread evenly on salmon. Bake until just firm, about 15 min.

Andouille Chicken Sausage Gumbo
Heat pan over medium heat. Add coconut oil. Add onions and sauté for 5 minutes, stirring frequently. Add remaining vegetables. Cook until beginning to soften.
Chicken with White Beans and Tomatoes
Heat oven to 350° F. In a 9-by-13-inch (or some other large) baking dish, toss the beans and tomatoes with the thyme and oregano, garlic, red pepper, 1 tsp of the oil, 1⁄2 teaspoon salt, and 1⁄4 teaspoon black pepper.
