• 6 eggs
  • 1 cup unsweetened almond, or rice, or coconut milk
  • ½ cup water
  • 1 cup steamed broccoli
  • 1/2 cup minced green onions
  • 1/2 cup mushrooms, steamed or sautéed
  • seasoning to taste (basil, oregano, cayenne, salt, pepper, etc)


Step 1

Note: Use any of your favorite vegetables in place of those suggested above. Other options include spinach, chard, onion, peppers, tomato.

Step 2

Preheat oven to 350. In a medium bowl, using a fork, whisk eggs, milk, water, and seasonings until well blended.

Step 3

Lightly grease a 9 or 10 inch pie pan with olive oil. Add cooked vegetables, pour in egg. Place pie pan on a baking sheet and bake 45 to 50 minutes, or until a knife inserted into center comes out clean. Let cool 5 minutes before slicing.

Step 4

Refrigerate leftovers and heat for a quick breakfast or snack.
