Ingredients

  • 1 cup quinoa, rinsed well
  • 1 cup raw pumpkin seeds
  • 1/3 cup chopped cilantro leaves
  • ¼ cup lime juice
  • ¾ tsp. chili powder
  • 1 (15 oz) can black beans, rinsed and drained
  • 2 tomatoes, finely chopped
  • 1 zucchini, finely chopped
  • 1 red bell pepper, seeded and chopped

Directions

Step 1

Cook quinoa according to directions. Once cooked, toss with remaining ingredients in a large bowl.
